Red Bell Pepper Soup


1 Red bell pepper
1/4 cup Cashews
1 cup water
Watercress or other leafy greens


  1. Set oven on medium – low; bring water to a boil
  2. Blend red pepper and cashews in a food processor
  3. Once water is boiling for a couple minutes remove from the oven top and add the red pepper and cashews
  4. Let the soup sit for a minute and then transfer to a bowl
  5. Garnish with red pepper and watercress
