Mini Spiced Cranberry-Oat Muffins

A perfect on-the-go breakfast or snack that’s yummy, nutritious and filling! Make a bigger batch for the week and store them in a Tupperware container. Enjoy xo

Yields:  9 mini muffins  


1 cup Rolled Oats
1 tbs. Chia Seeds
1 tbs. Sliced Almonds
1 tsp. Cinnamon
1/3 cup Dried Cranberries
1/4 cup Fresh Blackberries
1/4 cup Almond Milk
1/4 cup Maple Syrup
1 tbsp. Coconut oil


  1. Pre-heat oven to 350 degrees
  2. Lightly line muffin tin with coconut oil to avoid sticking
  3. In a bowl mix all the ingredients together: oats, chia seeds, cinnamon, cranberries, blackberries, almond milk, maple syrup, and coconut oil
  4. Transfer mixture into muffin tray
  5. Bake for 20-30mins
  6. Remove from oven; set aside for 5-10 minutes before serving
